As I write today’s post it is 6 am on a Tuesday morning and I am making potato leek soup for a debate watching party with a vegetarian friend tonight.
While I haven’t tried it (too early for soup) it has been a tried and true recipe for me. I ate it a lot when I was vegan.
Yes, I have been vegan…and I might add I was in superior health at that time. I was lean, strong and I competed and made it to the national finals for the Senior Games in cycling! So yes you can be very strong and vegan or vegetarian.
However, after that, I went back to eating anything I wanted. Although I still rarely eat any meat I am not as adherent to that diet anymore. I am also 10-15 pounds overweight now.
However, I am making my way back to it…not just to lose weight but to improve my overall health which at this time is optimal. I want to keep it that way.
After having read the China Study, Blue Zones, Forks Over Knives, How Not To Die, etc. etc. I think you get the point I am totally convinced meat is not our friend.
However, I don’t want to give up my daily breakfast of berries, pineapple or apple, granola, ground flaxseed, almonds and yes my Kalona Super Natural Organic Whole Milk Plain Greek Yogurt. I add a bit, alright, slightly more than a bit of maple syrup and I have a filling and pretty darn healthy breakfast.
